Apple and Pistachio Swirls

Ingredients

  • 300g royal gala apples sliced thinly (3 apples)

  • 2 tsp mixed spice 

  • 2 cinnamon sticks 

  • 150ml water 

  • ½ lemon juice 

  • 75g golden caster sugar 

  • 80g finely chopped pistachios 

Decoration 

  • ½ lemon juice 

  • 2 tbsp icing sugar 

  • 25g pistachio finely chopped 

Preparation

  1. In a heavy based pan spread out the slices of apple, cover with lemon juice and sprinkle with the sugar, mixed spice and cinnamon sticks before adding water to the pan to just above the level of the apples, and leaving to simmer on a medium heat for about 10 minutes or till apple slices are soft but not mushy. 

  2. Whilst apples are cooking finely chop the pistachios and unroll the pastry sheet leaving it on the parchment paper (it comes in handy later on) 

  3. When Apples are soft, drain them using a sieve (save the liquid for next time or syrup) and place on kitchen paper to absorb any extra moisture for about 3 minutes. 

  4. Place apple slices side by side over the whole sheet of pastry before sprinkling half the chopped pistachio generously over the layer of apple slices. Roll up the sheet piece of pastry to form a swill roll, making sure it is secure at the end of the sheet by running a damp pastry brush over it.

  5. Brush the roll with melted butter and carefully roll in the rest of the chopped pistachios, proceed to cut the roll with a sharp knife into portions about 1.5cm wide and place each swirl on a baking sheet with ample space for them to form. Place in the oven for 35 mins or till golden brown: Allow to cool before decorating with drizzle 

  6. Whilst the swirls bake stir together the lemon juice and icing sugar, when the swirls are cool, drizzle over the icing and sprinkle with roughly chopped pistachio. Enjoy with coffee.
