Turkey Kofta with Jeweled Couscous

Ready in 30 minutes

Serves 4 people

Ingredients

  • 375g 5% fat Turkey Mince 

  • 1 large white onion 

  • 5 cloves of  Garlic

  • 1 tbsp Chilli flakes

  • 1 large egg (beaten)

  • 1 tbsp Mixed herbs

  • 2 tsp Salt 

  • 2 tsp Pepper

  • 2 tsp Smoked paprika

  • 1 tbsp plain flour

For the couscous 

  • 300g butternut squash (cut into cubes and steamed)

  • 30g toasted flaked almonds 

  • 300g couscous

  • 400ml Vegetable stock 

  •  20g raisins 

  • 4tbsp extra virgin olive oil 

  • The juice of 2 oranges 

  • The seeds from half a large pomegranate

Preparation

  1. Place the mince, garlic, onion and seasoning of salt, pepper, paprika and mixed herbs into a bowl.Combine together well, then add the beaten egg 

  2. Check the consistency of your mixture and sprinkle in flour to bind before dividing the mixture into eight equal sized portions portions, cover and place in the fridge to chill for 10 minutes  

  3. Preheat Oven to 180C and pour oil onto a roasting tray (26 X 20cm)

  4. In a small bowl pour orange juice, balsamic vinegar and half the pomegranate seeds 

  5. Remove the koftas from the fridge, take out the hot roasting tray and transfer the koftas into tray 

  6. Pour orange juice and balsamic mixture into the tray before returning to the oven for 5 minutes

For the Jewelled couscous 

  1. After 5 minutes remove the koftas from the oven and Pour the couscous around them before adding vegetable stock to the baking tray and covering with foil before returning to the oven for 5 minutes.Fluff up the couscous with a  fork 

  2. Gently stir through the remaining ingredients (Almonds, raisins, butternut squash and pomegranate seeds) and serve
