Beetroot Quinoa
Ingredients
1 large beetroot
120g quinoa
360ml water
180ml oat milk
pinch of salt
1 large clove garlic
1 tsp butter
2 tbsp lemon juice
Preparation
Peel beetroot and chop into small cubes before frying in butter, garlic and lemon juice
Rinse the quinoa under cold water and tip into a small saucepan, cover with water and milk before bringing to the boil and adding the beetroot and a pinch of salt. Lower the heat and simmer for 15 mins until the grains have swollen. Drain then transfer to a bowl to cool slightly.
