Beetroot Quinoa

Ingredients

  • 1 large beetroot

  • 120g quinoa

  • 360ml water

  • 180ml oat milk

  • pinch of salt

  • 1 large clove garlic

  • 1 tsp butter

  • 2 tbsp lemon juice

Preparation

  1. Peel beetroot and chop into small cubes before frying in butter, garlic and lemon juice

  2. Rinse the quinoa under cold water and tip into a small saucepan, cover with water and milk before bringing to the boil and adding the beetroot and a pinch of salt. Lower the heat and simmer for 15 mins until the grains have swollen. Drain then transfer to a bowl to cool slightly.
