Jeweled cous cous
Ingredients
100g wholegrain cous cous
200ml boiling vegetable stock
1 tspn smoked paprika
1 tbsp sultanas
1 tbsp flaked almonds
1 tsp salt
1 tspn mixed herbs
1/2 tsp black pepper
seeds from 1/2 a pomegranate
Preparation
Pour the couscous into a bowl before adding the vegetable stock to the bowl and covering with foil before placing in the oven for 5 minutes.
Fluff up the couscous with a fork before gently stirring through the remaining ingredients (Almonds, raisins and pomegranate seeds) and serve warm.
