Jeweled cous cous

Ingredients

  • 100g wholegrain cous cous

  • 200ml boiling vegetable stock

  • 1 tspn smoked paprika

  • 1 tbsp sultanas

  • 1 tbsp flaked almonds

  • 1 tsp salt

  • 1 tspn mixed herbs

  • 1/2 tsp black pepper

  • seeds from 1/2 a pomegranate

Preparation

  1. Pour the couscous into a bowl before adding the vegetable stock to the bowl and covering with foil before placing in the oven for 5 minutes.

  2. Fluff up the couscous with a  fork before gently stirring through the remaining ingredients (Almonds, raisins and pomegranate seeds) and serve warm.
