Tangy Grilled Aubergine
Ingredients
1 Medium Aubergine
3 tbsp vinegar
1 1/2 tsp black pepper
2 large cloves of garlic (finely diced)
1 tbsp extra virgin olive oil
The juice of 1/2 lemon
Preparation
Slice aubergine into discs or length ways and cover in the apple cider vinegar before adding the rest of the ingredients. before leaving to marinate for 20 mins in the fridge.
Remove from the fridge and place in an iron skillet before placing under the grill on a medium heat for 25 mins or until the the aubergine is soft and a bit mushy in texture. Remove from the grill and serve with yogurt and pomegranate seeds.
