Roasted Chickpeas
Ingredients
240g Chickpeas (400g can)
1 tbsp Mixed herbs
1 tbsp Hot smoked paprika
1 tbsp season all
1 tbsp olive oil
Preperation
Drain the chickpeas, add to a large bowl
Heat oven to 180C fan/gas 4.
Tip the chickpeas into a bowl and toss with the olive oil, smoked paprika, cumin and coriander.
Toss well until the chickpeas are well coated, then tip out onto a baking tray and bake for 30 mins, moving them round the tray halfway through so they dry out evenly and are crunchy.
Leave to cool, then store in an airtight container.
