Mushroom Soup
Ingredients
250g Chestnut mushrooms
1 tbsp slightly salted butter
1 large onion
1 tsp mixed herbs
600ml stock
2 tsp pepper
2 tsp salt
2 cloves garlic
Preparation
Heat the butter in a medium sized saucepan over a medium heat. Add the onion, garlic and paprika and sweat for about 8-10 mins
Slice the mushrooms thinly and add them to the pan and cook down until soft, sprinkle over the mixed herbs, salt and pepper.
Pour in the stock and bring to the boil before simmering for 10-15 mins
Remove from the heat and blitz till smooth using a hand blender,
Serve with a swirl of cream and a sprinkle of parsley if you fancy and enjoy with a couple of slices of sourdough bread
