Pea Soup

Ingredients

  • 500g garden peas

  • 1 tbsp olive oil

  • 1 large white onion

  • 1 small red onion

  • 2 large cloves of garlic

  • 600ml chicken / veg stock

  • 2 tsp mixed herbs

  • 2 tsp salt or umami

  • 2 tsp black pepper

Preparation

  1. In a large saucepan heat the olive oil and sweat the onion and garlic for about 8-10 mins.

  2. Add the the mixed herbs the and peas to defrost for another 3-5 mins until most of the peas have defrosted, pour in the stock and bring the mixture to the boil, then add the salt and pepper before simmering for 10 minutes.

  3. Remove from the heat and blitz smooth using a hand blender if you have one

  4. To serve gently reheat the soup and stir through cream and top with crispy bacon lardons.
