Norwegian Rice Pudding (Risgrøt )

Ingredients

  • 100g pudding rice 

  • 200ml water 

  • 400ml almond milk/ any plant based milk

  • A pinch of salt 

  • 1tbs coconut sugar (optional)

Preparation

  1. Boil the water in a medium size saucepan

  2. Add the salt and rice 

  3. Reduce the heat and let the rice cook

  4. after cooking for around 10 minutes stir in the milk and leave to cook 

  5. Put on the lid and leave to cook till the pudding is thick 

  6. Serve with frozen/caramelised fruit, grated coconut and cacao nibs
