Sweet Potato Waffles

Ingredients

  • 200g Steamed sweet potato

  • 100g Self raising flour

  • 1 tsp Baking Powder

  • 1 tsp smoked paprika

  • 150 ml Rice milk

  • 1/2 tsp salt

Preparation

  1. Weigh all the dry ingredients, place in a large mixing bowl. Blend together the sweet potato and the milk

  2. Add the sweet potato and milk mixture to the dry ingredients. Add the paprika and salt and mix all ingredients together until all the large lumps have been broken up. Do not over mix otherwise the waffles will be heavy when cooked.

  3. Pre heat the waffle maker and spray with oil or brush with butter

  4. Pour 3/4 of a deep ladle of batter into the waffle maker and cook for 3-4 mins or until golden brown and crispy on the outside.

  5. Serve hot with maple syrup and crispy bacon or avocado and a poached egg . Also good served with sliced banana or blueberries.
